DEER CREEK GOLF & BANQUET FACILITY


Department: Food and Beverage

Reports to: Executive Chef or Executive Sous Chef

Overall Responsibility: Responsible for assisting with the efficient execution of food services in a restaurant and banquet setting while maintaining a clean working environment and adhering to health and safety policies.

 

Key Areas of Responsibilities:

  • Arriving at work for scheduled start time, ready to commence work with appropriate tools, uniform and in adherence to the grooming policy.
  • Help prepare, plate, and serve meals for restaurant guests and/or banquet functions.
  • Adhering to all health and safety standards, guidelines and policies.
  • Ensuring the cleanliness of the work area at all times.
  • Completing all given job tasks to set standards (while constantly seeking to improve)
  • Assist with dish washing and storage of dishes, flatware and equipment when required.
  • Follow detailed recipes at all times ensuring food quality.
  • Clean and maintain all kitchen tools and equipment.
  • Help keep the entire kitchen clean at all times. Sweep and mop floors when required.
  • Help with monthly inventory counts when required.
  • Control food waste and spoilage at all times.
  • Handle guest allergy concerns with appropriate care and importance.
  • May be required to help set up and oversee buffet services.

 

Qualifications, Knowledge, Skills and Abilities:

  • Previous cooking experience in large volume banquets or restaurants
  • Self-motivated and able to take initiative
  • Must be able to work well in a fast paced, high-energy environment
  • Must be available to work evenings and weekends.
  • Understanding of F.I.F.O. and product yield.
  • Understanding of knife use and safety.
  • Responsible and dependable
  • Understands time constraints
  • Pays attention to detail
  • Able to clean and maintain a work area

Department: Banquets and Special Events

Reports to: Banquet Manager and/or Banquet Captain 

Overview of Deer Creek Golf and Banquet Facility: Located at 2700 Audley Road North in Ajax, Ontario – Deer Creek Golf and Banquet Facility is comprised of 45 championship golf holes and a 50,000 square foot banquet facility. Deer Creek is capable of hosting golf tournaments for up to 360 golfers and a variety of special events for a 650 guest sit-down dinner or 1,200 guest’s reception style.

Scope of Job: To provide all guest with professional and enjoyable dining experience, through quality service in the most efficient and timely manner, at all times

Responsibilities and Accountability:

  • Always work in an effort to support the Deer Creek Golf Clubs Vision of WOWing our guests at every opportunity and support our Culture of Giving.  
  • Responsible to check current worksheet posted and proceed to room assigned, reporting to Banquet Captain on duty for direction.
  • To collect all banquet equipment to include flatware, china, glassware and serving utensils needed for each event.
  • To set tables with place settings as instructed by Banquet Captain.
  • Preparing condiments, bread baskets, clean and refill salt and pepper containers, sugar dishes, creamers, etc.
  • Assemble for briefing to discuss the flow of the evening and to go over the shift meeting notes and cleaning bursts.
  • Service of food/wine, efficiently and professionally conducted according to the Banquet Training Guide.
  • Anticipate guest needs, practice clean as you go.
  • Unload trays in the designated area, separating glassware, china and silverware.
  • Report any customer concerns and / or complaints to Banquet Captain or Manager.
  • Conduct and verbal communication with customer and staff must remain professional at all times.
  • Perform closing duties as assigned. Banquet Captain to oversee closing duties.
  • Sign out on designated sheet as well as logging out on Jonas prior to changing uniform. Banquet Captain to authorized departure.

Banquet Bartender

Department: Banquets and Special Events

Reports to: Banquet Captain or Banquets Manager

  • Prepare alcoholic and non-alcoholic beverages
  • Interact with customers, take orders and serve drinks
  • Assess customers’ needs and preferences and make recommendations
  • Restock and replenish bar inventory and supplies
  • Peel, slice and pit fruit for garnishing drinks
  • Prepare guest checks and process payments through POS system
  • Ensure end of shift inventories, cash and receipts balance 
  • Stay guest focused and nurture an excellent guest experience
  • Comply with all Health and Safety laws
  • Clean bars, work areas, and tables
  • Follow all Liquor Laws including the smart service of alcohol
  • Accurately maintain inventory counts
  • Follow all Deer Creek bartending policies and procedures

 

Job Requirements

  • Smart Serve Certificate required
  • 1-2 years bartending experience
  • Fantastic interpersonal skills, positive attitude and excellent communication skills
  • Ability to keep the bar organized, stocked and clean
  • Computer and POS system literacy 
  • Knowledge in mixing, garnishing and serving drinks
  • Knowledge of classes of alcohol, different glasses, brand names and garnishments
  • Ability to work flexible schedules. Must be available days, evenings and weekends
